Easy Vegan Tacos

Almost everyone loves tacos, and better yet they are affordable and easy to make. You can even customize your taco filling and toppings so there is something for everyone. Often tacos are made with ground beef, however, there are multiple ways to make vegan tacos. So even as a vegan you can continue to enjoy “Taco Tuesday” and dig in! 1. 5 Ingredient Tacos

This vegan taco recipe from FreshOffTheGrid features TVP, or textured vegetable protein. TVP has a similar texture to ground beef, which makes it a perfect vegan substitute. It is made from soy flour, and will take on the flavor of whatever spices or sauce you add to it. Ensure you find a good taco seasoning, or make your own. The other ingredients you need are a can of black beans, dried minced onions (or onion powder), and water. Simply boil the water, taco seasoning, and onion, then turn to low and add the TPV. Once the liquid is absorbed, drain the beans and stir through until heated. This whole process can be complete within 10-15 minutes! Making this taco recipe not only easy and delicious, but quick! Then simply serve with tortillas and any taco toppings you like.

2. Jackfruit Tacos

A popular vegan taco filling is jackfruit. Not only does it provide a meaty texture, but it also absorbs flavors well. In this recipe from LoveAndLemons, the jackfruit is flavored using Jamaican-jerk seasoning. To make this recipe even easier you can use an instant pot or slowcooker instead of a regular pot. The jackfruit can also be made up to 3 days in advance, so it is perfect for those who like to meal prep. It also uses canned jackfruit, which can be found in most supermarkets. Simply drain and shred the jackfruit to prepare it. Then heat a pan with oil, add scallions, garlic, and seasoning until fragrant. Add in your jackfruit, other sauce ingredients, and water. Cook for 20 minutes and you are ready to eat!

3. Black Bean Tacos

This may be one of the most common vegan taco fillings you will see when out and about. However, it is also super simple to make, and super affordable as well. Simply buy a can of black beans to get started. You’ll also need to buy taco seasoning or make your own like above. Start by heating oil in a pan, then add your drained black beans and taco seasoning, and mix well. Cook until heated through and assemble your tacos. Black bean tacos traditionally have corn on them as well, so drain a can of corn and add some to your taco. This taco filling freezes well and will last 4-5 days in the fridge.
